The Origin of Harry’s Bar

The story of Harry’s Bar begins with a gesture of generosity that would become legendary. In 1928, a young American named Harry Pickering was staying in Venice and used to attend the Hotel Europa, where Giuseppe Cipriani worked as a bartender. After facing financial difficulties, Pickering was forced to interrupt his stay. Moved by the young man’s situation, Cipriani lent him 10,000 liras so that he could continue his journey. Two years later, Pickering returned to Venice and, in an act of gratitude, returned to Cipriani the amount with generous interest, suggesting that he open his own bar. Thus, on May 13, 1931, Harry’s Bar was born, named in honor of the American who made his dream possible.

Since then, the place has become a true refuge for writers, artists and influential personalities. Ernest Hemingway, one of the bar’s biggest admirers, often spent hours on the spot, enjoying drinks and getting inspired for his works. Other illustrious customers include Orson Welles, Peggy Guggenheim, Truman Capote, Charlie Chaplin and even members of European royalty.

The Invention of Bellini and Carpaccio

Harry’s Bar is not only a legendary place for its history, but also for its gastronomic creations that have won the world. It was there that Giuseppe Cipriani invented two international classics:

  • Bellini: Created in the 1940s, the famous cocktail takes prosecco and white peach puree, resulting in a refreshing and slightly sweet drink. The name was inspired by the colors used by the Renaissance painter Giovanni Bellini, whose works were admired by Cipriani.
  • Carpaccio: In the 1950s, Cipriani created this dish at the request of a client, Countess Amalia Nani Mocenigo, who needed to follow a diet with raw meats. He served thin slices of raw beef, accompanied by a special sauce based on mayonnaise and mustard. The name was a tribute to the painter Vittore Carpaccio, famous for his paintings in vibrant shades of red and white.

These two inventions helped further consolidate the reputation of Harry’s Bar, turning it into a landmark of international cuisine.
